Gluten encephalopathy shows itself as migraine headaches and stroke-like symptoms, such as loss of control over one arm or leg, difficulty speaking, or visual difficulties. On MRI of the brain, there is characteristic evidence of damage surrounding blood vessels in cerebral tissue.
